Cut from the belly, streaky is layered with fat, which is why it crisps better than any other cut and carries the most flavour. Grill or fry until crisp for a breakfast, or use it to wrap chicken, line a terrine or lift a stew. Also the right choice for a bacon lattice on the barbecue.
Oven at 200°C on a rack for 10-12 min gives more even crispness than a pan, and no splattered hob.
3–4 rashers per person for a breakfast. Allow 2 rashers per chicken breast if wrapping.
