Pig's liver has a deeper, stronger flavour than lamb's and is one of the best value pieces of meat in the shop. Cook it fast and serve it slightly pink — the moment it is grey it is ruined. Classic with onions, bacon and a rich gravy, and the traditional base for a homemade pâté or faggots.
Slice 1cm thick, dust in seasoned flour, and give it 90 seconds a side in a hot pan. Serve pink in the middle. Overcooked liver is the whole reason people think they dislike it.
150-200g per person as a main with onions and gravy.
