Cracked black pepper sausage

Coarsely cracked black pepper through our pork sausage, which gives a warmth and bite that plain sausages lack. Not chilli hot — just properly peppery. Cook slowly, turning, until browned. Excellent with mash and a strong onion gravy, or in a breakfast where it can hold its own.
Medium heat, 15–18 min, turning regularly. Or 190°C in the oven for 25 min, which is easier and more even.
