Skirt has an open, loose grain and one of the strongest beef flavours of any cut, which is why chefs guard it. It works two ways: seared very fast and served rare, carved thinly across the grain, or braised slowly until soft. What it will not tolerate is the middle ground. Traditional in Cornish pasties and outstanding in fajitas.
Two options only: 2 min a side very hot and served rare, or 2+ hours braised. Anything in between is tough. Always carve thinly across the grain.
