Venison makes a leaner sausage with a deeper, slightly gamey flavour that stands well apart from pork. Cook these gently — there is less fat to protect them — and serve with mash, braised red cabbage or a rich red wine gravy. Particularly good through the colder months.
Medium-low heat, 15 min turning. Add a splash of oil. These have far less fat than pork and will dry if rushed.
