Chunks of rump steak threaded onto skewers and marinated in a warm, smoky Mexican-style blend with chilli, cumin and paprika. The marinade seasons the meat right through and caramelises over the heat. Best cooked over coals or under a hot grill, turned regularly, and served with flatbreads, soured cream and a squeeze of lime. Ready to go straight on the barbecue.
Coals rather than flame — the marinade has sugar in it and will catch. Turn every 2 min, 10–12 min total.
