Our chipolatas wrapped by hand in streaky bacon. Bake them until the bacon is crisp and caught at the edges, ideally on a rack so the fat drains away. The one thing on the Christmas table that never comes back, and always worth making more than you think you need.
200°C for 25–30 min on a rack so the fat drains and the bacon crisps underneath as well as on top. Turn once.
4-6 per person at Christmas dinner. Nobody has ever complained about too many.
