Chicken breast sliced thin and crumbed, ready to fry.

Chicken breast sliced thin and coated in pepper steak seasoning, prepared by hand. Shallow fry in a hot pan for a few minutes a side until deep golden, then drain and serve with a wedge of lemon. Thin enough to cook through quickly and stay tender.
Shallow fry in 1cm of hot oil, 3–4 min a side until deep golden. Drain on a rack, not kitchen paper, or the underside goes soggy.
