Trimmed and cut into even cubes in the shop so it is ready to go straight into the pan. Even sizing matters more than people think: it means everything cooks at the same rate and nothing is still chewy when the rest is falling apart. Brown it in batches for the best flavour, then braise slowly. Perfect for stews, curries, pies and the slow cooker.
Dry the cubes on kitchen paper before browning or they will not colour. Brown in three batches, then braise 2 hours at 150°C or 6–8 hours in a slow cooker.
200-225g per person for a stew, or 175g if it is going into a pie with plenty of gravy.
