A small roasting joint sized for one or two.

All the pleasure of a proper roast dinner without cooking for a crowd, or a week of leftovers. Prepared and tied so it holds its shape and roasts evenly in well under an hour. Sear it first if you like a darker crust, roast to your liking, and rest it before carving. Ideal for a midweek roast, a small household, or a first Sunday dinner in a new place.
Sear on all sides in a hot pan first, then 200°C for around 30–40 min. Rest 15 min. Small joints overcook fast, so use a thermometer if you have one.
