Chicken with pesto, mozzarella and coated in an Italian tomato based crumb
Chicken breast coated in an Italian tomato based crumb filled with pesto coated mozzarella, so the cheese melts through as it bakes. Straight into the oven from the counter. Serve with pasta, roast tomatoes or a simple green salad and a drizzle of olive oil.
180°C for 30-35 min. Cook in a dish so the melted mozzarella stays with the chicken instead of running across the oven.
