A proper lamb roast without cooking for the whole family. Prepared and tied so it holds its shape and roasts evenly in under an hour. Season, roast to pink, ideal for a small household or a midweek roast that does not turn into three days of leftovers.
Sear first, then 200°C for around 30 min for pink. Rest 15 min. Small joints overcook quickly, so check early.
Serves 1–2. Allow 225-250g per person boneless.
