A mature cheddar with the sharpness and depth that comes with proper ageing. Excellent on a cheeseboard, melted over a burger, or in a cheese and onion sandwich with a strong pickle.
Out of the fridge 30 min before serving. For melting, grate rather than slice — mature cheddar can go oily if slabbed under a grill.
30–50g per person on a cheeseboard, 100g if it is the main event.
