Jerk is a serious marinade — it suits chicken better than anything else. Cook over coals for the smoke, turning regularly. Serve with rice and peas, a wedge of lime and something cold to drink. Nicely spiced not too hot
10-15 min over medium coals, turning every 3 min, or 200°C in the oven for 20 min. Confirm 75°C before serving.
